Our soba noodles are made using buckwheat flour milled from buckwheat grown in Horokanai, Hokkaido, using the traditional pounding method, resulting in a rich aroma and authentic buckwheat flavor.
We offer "Sarashina" buckwheat noodles, made from only the center of the buckwheat grain, which you can enjoy as the final dish of your meal.

*The "dotsuki" method is a very rare method of grinding buckwheat flour by pounding it with a pestle, rather than grinding it with a stone mill. Buckwheat is very sensitive to heat, and its aroma, flavor, and color can be lost if heated. Therefore, the dotsuki method, which generates less frictional heat than the common stone mill method, is used to mill the buckwheat and preserve its original flavor.
